RED LENTILS DAHL

Ingredients (serves 4):

1 yellow onion

4 cloves garlic, minced

2 tbsp minced fresh ginger

2 tbsp curry powder

400 ml coconut milk

1 L vegetal broth

400 gr diced tomatoes 

200 gr dry red lentils 

some fresh spinach

TOPPINGS:

1 lime

fresh cilantro

yogurt

 

Chop the onion and saute in a big saucepan over medium heat for a couple of minutes. Add ginger and garlic along with the curry powder, cook for 2 minutes.

Add the coconut milk, tomatoes, veggie stock and lentils. Let simmer for 20 minutes.

Add the fresh spinach at the end, season in salt and pepper if needed. Serve with fresh cilantro, some yogurt and a splash of lime juice.
